Only thing regarding your gear Idd like to say is you have too much expertise. I dont know if you just dont have other pieces or what but you should try to get that little lower. You are currently at 32 expertise even without the SoV glyph which is better than exo glyph if you can get full benefit of it. You should try to aim to 26 expertise with glyph, so 16 expertise from gear and 10 from glyph. Shadow's Edge is better than Bryntroll so use it.
Being top 3 in the damages seems about right, I used to be there too about every fight but nowadays not that often =3 since our other classes(rogues etc.) push so much damage now, and tbh many of the ICC fights arent that suitable for ret compared to DKs for example, this ofc depends on what your guild requires you to do. If you have to switch to every add in putricide, deathwisper, marrowgar(spikes), lk it will ofc lower your dps a lot, but atleast you get the job done! =).
For the little tips, I cba to write everything down what comes to my mind here. The best tip here is to check out EJ retrithread and try to look for tips there, thats what im doing. Check that thread out every now and then if something handy gets found out and you can improve your play with it. You can also check other retribution related threads on that site.

I know im over the exp cap , but haven't got gear to swap out too :( Hoping the plate boots drop of Lady tonite so I get them, withe regarding gear, would u get the advise the T10 chest or should I go for the libram next?

Libram is really small upgrade when using SoV but kinda big when using other seals. Your chest is as good as 251 t10 chest if you dont have any Conq tokens and I suppose you dont since you have 2x251 tiers already. Libram is tiny upgrade compared to chest if you arent getting many conq tokens in short time so get your libram or save the badges for later.

That's Boda's UI adapted for an holy paladin it is a very nice graphical UI but I think it has also everything u need as an holy pala.
The changes I've made are:
- pally power on the top
- added quartz
- added grid instead of pitbull raid frames
and other less important changes...

I was reading up on haste, and how powerful it can be with the 2p bonus which is why i have tested out +10str/+10 haste, with the haste trinket i am using i can notice a bit of an increase, ~400 dps over my old trinket, I am however unable to obtain death's choice/verdict at all.... even with 15-20k gold on the table.... just my bad luck.
My questions:
When to use Avenging Wrath... I understand generally use it during Heroism if you can, or during parts where you have to burn things fast such as oozes even.. With my trinket it requires ~20 hits, my libram requires 5 crusader strikes (unless i revert back to libram of valiance)... At the start of the fight, you basically build up 5 stacks of SoV, some people say just to AW then.. it can lead to more dps, if using libram of valiance you have the holy energy up, but the internal cooldowns on death's verdict/DMC:G generally arent up, and beserking may not be up...
If you were in my situation, with the best trinket available being Herkuml/DMC:G, I would think waiting til 5 stacks SoV, 5 crusader strikes, 20 stacks from Herkuml, then waiting for either beserking/DMC to proc, and popping AW.... but when sitting on the charts, it takes so long for me to build up dps, i sit lower then i know i used to with my tier 9 2p bonus and tier 10 2p bonus with a pure crit stack.
Testing it out on fights, I used to be able to run in with ilvl 245 gear on Northrend Beasts(Gormokk specifically), Crusader Strike, Judge, AW, DS, etc. and sit at ~9-9.5k dps, if i waited til 5 stacks SoV, i'd sit at say ~8k dps near the end of Gormokk.
Now, with my current ilvl gear being close to 258/264... when I go back and do Gormokk, i end between ~7-8.3k depending on how bad the other dps is, because of how long it takes me to build up my dps. Building dps and steadily gaining dps over time is a bonus, i notice a higher top end damage on such patchwerk fights like twin valks... but on any fight where there is more then 8-10 seconds of no dps, it seems i cannot sustain a high end dps because of librams dropping, Herkuml dropping, etc.
Even testing out on fights like Deathbringer Saurfang, I used to sit at a solid 9-9.2k near his death, without consecration being in rotation at all, and that was fresh out of ToC/partial ToGC, me getting the first Bryntroll and using it the first week on Saurfang...
Now with my current level gear, and the 5% buff, I sit pretty solid at 9k... which is completely retarded...
What should i do? revert back to 2p 245/2p t10 and go back crit stack, and use a hit trinket which puts me 128 over hit soft cap... or is it something in my rotation that is screwing me over with this tier 10 4 peice bonus set....

Indeed, the bonus is pretty bad because it can't be relied on like for example the druid bonus. But the Gunship shoulders only give 18 more stamina. I think its a fair trade for a small RNG cooldown.

The whole "problem" of ret dps is the FCFS system (First Come First Serve) which means we dont have a specific short term rotation but we just hit the skill which does the most DPS when 2 or more skills come off cooldown at the same time. The power of Glyph of Consecration comes into picture here. I noticed you arent using it now and you said you are swapping your exo and conse glyphs so I assume you are swapping it with exo but you should always have conse glyph on! Eventho it doesnt seem as just flat dps increase like Glyph of Judgement its power comes from giving you more "free" global cooldowns and mana. Those free global cds are important for ret especially with the 2pt10 bonus which resets your DS cd and makes your skill cooldowns clash even more. So start using Conse glyph as full time glyph. Use exo only if you have too much expertise from gear and dont have any other pieces to lower it, in these situations replace SoV glyph with exo.
You are correct about haste being a powerful stat when you get those tier10s but 10str/10crit are still better gems atleast for my gear, however you shouldnt stress too much about this because the difference between these gems is probably about 0.5-1dps.
I think the best time to use AW in your position is when your SoV is stacked to 5 in sync with Heroism ofc if possible. Your libram might not be stacked to 5 neither your herkuml to 20 but delaying AW too much isnt good either. You can try to time your trinket procs to proc 12-13 seconds after pull if you have a pull timer (BigWigs has some for bosses like saurfang,LK) so that your trinkets proc when you have your 5 stacks up, this isnt always possible ofc.
About Gormokk, this isnt the best place for the new libram and herkuml since the fight is short so you wont have fully stacked libram and trinket on even close the full time and yes, fights where libram and herkuml drop arent that good places to use them because its significant dps loss if your 5 stack libram drops and you have to build it up again and again. I suggest you to carry your Libram of Valiance with you for fights like this. And about Deathbringer, "without consecration being in rotation at all" sounds like you dont press your buttons fast enough or you are skipping globals or you are having insane luck with 2pt10 =), but you should always have time for conse also, at least I dont remember a fight where I didnt have time for it, just press your buttons faster so you dont miss those precious globals.
Im sure you can make your dps better by getting the conse glyph full time on, using proper librams to fights that need it and watch your skill usage more carefully so you dont skip any globals.
